Carambola Gardens, located on the main road in Sandy Bay across from Anthony's Key Resort, is a very nice place to hike and see some of the island's flora. There is a more rugged trail which goes up to the top of Carambola Mtn (I use the term loosely). The views from there are very nice. If you prefer a shorter, easier walk, they also have a marked self-guided nature trail which is very accessible to an older person. (benches to rest)
Located at Anthony's Key, there is the Bay Island Museum and Marine Institute. This is very informative and a nice place to duck out of the heat or on a rainy day (should one happen while you're there). Also at Anthony's Key are the dolphins.
You might also choose to rent a car for a day and explore the island. You can't get lost. On the east end, near Punta Gorda, there is a Garifuna cultural center. Punta Gorda is primarily a Garifuna settlement and they have a nice information center - an interesting culture well worth learning about.
