Here are some more thoughts on your situation with being ticketed from SAP-RTB via LCE.
If you get off at La Ceiba, even though you are ticketed and checked in to Roatan...
You would have to only carry hand luggage to take off with you when you deplane in La Ceiba (and hand luggage is very limited at that because of aircraft size) otherwise your checked luggage would arrive in Roatan.
If you got off at La Ceiba when you aren't supposed to, you couldn't check in again in La Ceiba for your return to San Pedro Sula, although you probably could check in Roatan as they wouldn't probably have a record of you deplaning during the La Ceiba stop. Yes, you could then ferry across from La Ceiba to Roatan.
So luggage might be your only obstacle for deplaning in La Ceiba.
Of course, you could call the airline and see what you could do to have them recognize LCE as a stopover. But that could be more expensive.
