Barbie -
Check, double check and triple check with whomever you plan on
buying your air ticket to make sure you can board without problems.
Based on my experience (about 35 trips over the past 7 years, the
most recent being 2 months ago) I have never had a Honduran
immigration official check my ticket for onward travel on entry.
No guarantees of course.
My only experience with immigration on the onward travel requirement
was passing from Costa Rica to Panama overland by car. Flashing a
gold visa card did the trick in lieu of a ticket out. On the way back
in to Costa Rica no one asked.
