Carolyn -
Roatan is a fun place. Great beaches and diving. You won't have any problems finding places to stock your frige around West End. Renting a car is relatively expensive and you may consider scooters or local taxi or bus as an alternative. Play it by ear.
If you decide to take a mainland excursion consider the ferry as a much cheaper alternative than the flight. Its a fun trip for an hour and a half. We've got a couple of mainland tour operators linked on our website {below} Maps, Links page which you might wish to explore for fun mainland adventures - there's more to do than simply jungle. If you want to check out Roatan-La Ceiba flight pries we also have a link to Islena Airlines on the same page.
Have fun, travel safe, bring a good bug repellant.
