I can only comment on a couple areas where you will be visiting, but am sure others on the list can fill you on on the other places.
Cuero y Salado - a really nice place to spend a day. You travel back into the reserve on a rail. Along the way, you can see a variety if birds and take in some beautiful scenery. We thoroughly enjoyed the day we spent in Cuero y Salado. It's a shame, more people don't take the time to experience it.
Pico Bonito - Although I have not been here ... it is on my "Must Do" list for one of these days. I have never heard anyone who has been there that didn't enjoy the beauty.
Also in the greater LaCeiba and Tela areas ... both of these recommendations (as well as Cuero y Salado) can be arranged through Garifuna Tours - http://www.garifunatours.com/index.php Garifuna Tours is a primo tour operator on the coast of Honduras. We have toured with them to Cuero y Salado, Punta Sal, Los Micos Lagoon and Miami and would highly recommend them. * If you enjoy plants, Lancetilla Gardens would also be a good choice. * If you're into bird watching, a visit to Los Micros Lagoon and the Gairfuna village of Miami would also be an enjoyable day.
The Marine Institute as well as the Bay Islands Museum (both located on the grounds of Anthony's Key Resort) are well worth a look. They are not large and don't take a lot of time to visit, but we learned alot from the hour or so we spent here and found many interesting things. DEfinitely a great way to spend a rainy day (and they do happen some times).
Carambola Gardens, located on the main road in Roatan and almost across the road from Anthony's Key, is a very peaceful place. It is one of our favorite places on the island. It is not a big place, but if you're interested in the tropical flora, I would recommend it. They have a short self guided trail that is nice if you're in a hurry. Or, there is a longer trail which leads to the top of Carambola "Mtn", which is a rewoearding hike. The views from the top are worth it! Bring lots of water and bug repellant, as the hike up is often through 'jungle-like' areas that is heaven to mosquitoes.
Snorkeling can be done just about anywhere on Roatan right from shore. The reef is very close to shore in many places. Popular snorkel spots are West Bay, Half Moon Bay in West End, or Spooky Channel over by Sandy Bay. You will find both snorkeling and diving very rewarding in the Bay Islands.
