You should be able to fill in your time in Copan easily enough. I have spent sometime in Santa Rosa and Gracias and both locations have attractions but it is a little far from Copan for a day trip, the distances may not seem much but the travel time is a 3 or 4 hrs each way.
In Copan, check out the ruins and musuem, go to the bird park, butterfly farm and be sure to go to Hacienda San Lucas- horse riding or hiking to a Mayan site on the property- be sure to have lunch or dinner there, by far some of the best local food in Honduras. Also have a meal at Carnitas Lia Nola (I think that is it), also great food.
