I would spend a few days in La Ceiba----cloud forests, waterfalls, almost deserted miles and miles of white sand beaches, no sandflies, lagoons, etc. Specifically see: Cuero y Salado, which is at least 20 sq. miles of the "land time forgot" lagoons with monkeys, manatees, etc. etc. Rio Cangrejal for class three to five (depends on season) rapids for rafting and kayaking.
