I would probably suggest San Pedro Sula, you can do a day or overnight trip to Copan (I recommend an overnight, as it is 3 hrs drive each way). You can also go to Omoa and the Fort one day, and then try Lake Yojoa another day or even Tela on the North Coast another day.
I would recommend either local tours or renting a car doing it by bus will take a little longer, and day trips would be hard.
San Pedro Sula has plenty of nice hotels.
