Megan,
You should have no problem. Your passport needs to be valid 3 months FROM the date of entry INTO Honduras. This is true for many countries. They don;t want your passport to expire while you are in Honduras. Also they have a very good American Consulate in the US Embassy here in Tegucigalpa that can help you if you should loose your passport or need some type of assistance.
the Consul General is Ian Brownlee, the telephone number in Tegucigalpa is 238-5114 xt 4400. You can keep the number handy.
Most problems with luggage occur with TACA airlines. If you are flying Continental, Delta, American they seem to have less problems. If you have carry on size bag, you don;t need to check it and can store in the overhead compartment. Your purse can be stowed overhead or under the seat in front of you.
Have a great visit to Honduras.
Don;t worry, you should be fine.
